OX TAIL SOUP ( SOP BUNTUT SAPI )
Ingredients :
1 kg of ox tail
4 cloves of garlic
3 cm of ginger
1 bunch of celery
4 callions – copped it to 2 cms length
1 nutmeg ( mashed)
5 cloves
5 carrots – cut into 3 cm pieces
4 tomato – cut into square
Salt
White pepper
Ingredients being mashed :
10 cloves of red onion
5 cloves of garlic
Topping and complimentary :
4 potato – cut into square
Mashed chilli
Lemon juice
Fried red onion ( if you like )
Direction :
1. 1. Boil oxtail with water, salt, garlic, ginger,cloves and pepper over low heat until tender oxtail, ( took me almost 3 hours – u can add more water along the way .. until the oxtail really tender)
2. 2. Heat 2 tablespoons of cooking oil, saute the mashed ingredients until fragrant and cooked. Remove and set aside.
3. 3. Put carrots, and potatoes to the broth and cook until the vegetables are cooked, then enter the seasoning, stir well, add also the scallions.
4. 4. Serve the oxtail in a bowl, sprinkle with celery and onion cooking, tomato, chilli and lemon juice.
